My home has five extensions with different roof angles and one extension with a very flat roof angle that needed a "rolled roof" solution that is pretty ugly. 1. Does the fact that I have all of these different roofs and angles increase the cost very much? 2. Can I put metal roof on the flatter roof that has the "rolled roof" now?

The very low slope roof will require a metal roof system designed for that slope. Many of the commercial systems can be used on nearly flat roofs.
As far as the roof's complexity, sure, that affects costs for labor and materials. But it affects the cost of any roofing material, not just metal.
You will need to get an experienced metal roofing contractor out to take a look at things and discuss your needs.
