I'm installing a standing seam roof on my house and would like to know the pros and cons of laying double bubble insulation down over the synthetic underlayment. I thought a bit of insulation and noise deadening would be a plus, but I'm also concerned about condensation between the insulation and the metal panels. This is a cape cod style home.

That type of insulation has very little application value in this case.
You are trying to slow conductive, not radiant, heat gain in that application.
The thin foil bubble does little to zero in that case.
If you want insulation on the roof deck, look into a rigid insulation board.
