Copper can make a beautiful and durable roof.
However, there really is no practical way to keep it shiny. In most applications, it will have turned to a brown "aged penny" color within 12 or so months. It will develop the characteristic green patina over time, perhaps 3 - 15 years. Salt environments speed up that process.
There are also painted steel and aluminum roofs available which have a copper look. Some of those colors may be lower gloss.
