Is standing-seam metal roofing workable over a california gable (the ridge extends out kind-of-like the prow of a ship)?

It is, but it is difficult and may not always have the most desired aesthetic results. The most important thing is to not flash it in a way which traps water, tee leaves and needles, ice and snow. This is more easily done with metal shingles than with standing seam, frankly.
