Are the building code requirements (the IRC in the US and the National Building Code in Canada) for metal roofing material (shingles or sheets) minimum thickness, equivalent between the two countries? Stated differently, do manufacturers need to produce a specific/thicker gauge for one one country vs. the other? Thanks.

Thanks for your question but there is not an easy answer to it.
Most requirements are more performance based rather than prescriptive. However, you will find some prescriptive requirements especially in the IRC but they vary based upon type of metal and type of panels profile. Here's the link to that part of the IRC code: https://codes.iccsafe.org/content/IRC2018/chapter-9-roof-assemblies
The NBC I do not believe has any structure prescriptive components of the code but it can also be researched online.
